Bangers
  1. Cook sausages in medium saucepan or skillet until they are browned and cooked thoroughly.
  2. In the same pan add butter, olive oil, and onions, cook for 3-5m minutes until their lucent.
  3. Add Chicken stock and red wine and cook for another 3-4 minutes until reduced. Add Heavy Cream and cook another minute or two. Season with Salt and Pepper.
Mash
  1. Cook cauliflower until tender. Mash* and add butter and cheese whip till you have the consistency of Mashed Potatoes. Fold in Cheese. *Add hot cooked cauliflower to a food processor. Add butter and cream and pulse until the consistency of mashed potatoes. Pour into serving bowl and fold in cheese.

  2. Plate the Sausage and onions and the gravy add ½ cups Mashed Cauliflower to the plate and serve. Garnish with Parsley.

  1. 1. Preheat oven to 350
  2. 2. In a mixing bowl, mix spinach, bread crumbs, parmesan cheese, butter, green onion, eggs, salt and pepper.
  3. 3. Shape the balls into 1 inch balls.
  4. 4. Arrange balls in a single layer on large baking sheet.
  5. 5. Bake in the preheated oven 10 to 15 minutes until lightly browned.

  1. Preheat broiler. Heat olive oil in a large ovenproof skillet over medium heat. Add garlic, if using, sauté, add peppers, sauté for 2 minutes. Add anchovies, capers, olives, basil, oregano, broth & wine. Stir until blended & cook 3-4 minutes. Add salt & pepper. Place spoonful of mixture on toasted Italian bread. Sprinkle each with breadcrumbs & drizzle with olive oil. Broil on low for 2-3 minutes, until topping is golden.

  1. Boil potatoes with the skin on, until fork tender. Drain and let cool. Hard boil eggs. Peel and cool. Cut potatoes into approx. 1/2 inch cubes. Cut up eggs and add to potatoes. Next add pickles and onions. Lightly mix these ingredients. In a separate bowl, mix mayo, mustard, pickle juice and sugar. Add to potato mixture. Season with salt and pepper to taste.

Instructions
  1. Broil the eggplant on high till you hear a bursting sound. Take out of oven and cool before peeling off skin. Smash it with a fork. Beat the egg, approximately you need one egg per eggplant. Pour it over the smashed eggplant. Fry garlic till brown, add scallions and tomatoes. Then gently lift the eggplant by its stem and lay over the fried veggies. Season with salt/pepper. Flip over once cooked golden brown on one side. Serve while hot with soy sauce.
