You are never too old to learn, which is what I was doing for some of the recipes for this show. Thankfully, many friends in the Hispanic community helped me learn to make the Tamales. So, join me in learning how to make a Mexican dinner.

 

Lyle’s Mexican Rice

Ingredients

  • 1 cup Rice
  • 2 carrots diced
  • 1 onion diced
  • 8 oz Tomato sauce or 1 cup
  • 1/2 cup English Peas
  • 1/3 cup oil
  • 1 1/2 tsp Cumin
  • 1 Tbsp Salt
  • 2 1/2 cups water

Instructions

  • Place oil & rice in a skillet and stir until a golden brown. Drain off some of the excess oil. Add cumin, water, onions, and carrots. Cover & cook with a tight-fitting lid (about 15 minutes). Add English peas and cover and cook another 5 minutes or until all of water is consumed.

LYLE’S POP’S POPCORN CORNBREAD

Ingredients

  • 3 lb Bag Yellow PopCorn Kernels unpopped
  • 2 cups Corn Meal from PopCorn
  • ½ cup Flour
  • ½ cup Masa Flour
  • 5 tsp Baking Powder
  • 3 Eggs
  • 1/3 cup Shortening, butter, lard (melted), or cooking oil
  • 1/3 tsp Salt
  • 1/3 cup Sugar
  • 1 1/3 cup Milk

Instructions

  • Preheat oven at 375° F

Corn Meal

  • Place a small handful at a time of popcorn kernels in a glass jar blender
  • and pulverize… empty into a flour sifter and sift into a bowl.

Cornbread

  • Put the remainder back into the blender and blend again. Repeat each hand full, until you have 2 cups of popcorn cornmeal. Set aside & save small *hard pieces of corn.
  • Put all ingredients in a mixing bowl & stir until smooth.
  • Spray a 9 x 13 baking pan with butter/flour (or use something like Baker’s Joy spray). Pour in the batter & spread smooth. Bake about 30 minutes or until a toothpick comes out clean.

*(Note: You can boil those larger pieces in water to make yellow grits for breakfast.)

Kathryn’s Mexican Salad

Ingredients

Salad

  • 1 Head Red and Green Lettuce optional Mixed lettuce rinsed, dried and torn
  • 3-4 cocktail tomatoes cut in quarters
  • 1 avocado diced
  • 1 English cucumber seeded and chopped
  • ¼ large red onion thinly sliced- spread apart
  • 2/3 cup fresh cilantro chopped
  • 1 miniature red pepper chopped (optional)
  • 1 miniature Yellow pepper chopped (optional)
  • 1/2 cup black olives cut in half
  • 1 cup feta cheese crumbled

Dressing

  • 1 Tbsp lime juice
  • Zest of one lime optional
  • 3 Tbsp olive oil
  • ½ tsp cumin
  • ¼ tsp black pepper
  • ½ tsp sea salt

Instructions

Salad

  • Chop or tear lettuce and put into the salad bowl,
  • Slice tomatoes in quarters add to salad, slice onion in thin strips add to the bowl,
  • Chop cilantro finely and add to salad. Cut olives in half, add seed peppers finely chopped, and add to the salad. Save the Feta cheese until serving.

Dressing

  • To make the dressing, zest, and juice one lime. Add to a small bowl or small jar. Add the olive oil, cumin, black pepper, and sea salt. Mix well or shake the jar to mix. Refrigerate both dressing and salad unless you are serving immediately.
  • Once you are ready to serve, pour salad dressing over the salad mix. Top with the Feta cheese and serve.
  • Makes enough for 4 servings

Lyle’s Old Time TAMALES

Ingredients

  • 3 lbs Pork cut into 3 inch pieces
  • 2 small onions quartered
  • 2 tsp Salt
  • 1/3 cup cooking oil
  • 6 cups water or chicken stock
  • 4 Cloves Garlic minced
  • 2 Tbsp Cumin Comino seasoning
  • 1/2 lb dried Ancho Peppers
  • Boiling water to soak peppers
  • 2 1/2 cups Masa
  • 1 1/2 cups instant grits
  • 1/2 cup water from soaked peppers & meat stock
  • 1/2 cup lard
  • 2 Pkgs Corn Shucks

Instructions

Step 1: Ancho Peppers

  • Soak Ancho’s in a pot of water for 6-8 hours. Drain remove seeds and stems but reserve the liquid. Process the drained peppers in a blender with some of the liquid. Using a seive pour the mixture through the strainer and set aside.

Step 2: Meat

  • For this recipe, we will be using a hotpot to save time, however, you can use a crockpot or large pan and roast in the oven.
  • Add the pork, onions, salt/pepper, and water/stock to your hotpot. Set your temperature according to the manufacturer’s instructions for cooking pork shoulder.
  • Once the pork is done, remove from the liquid and either shred or cut into small pieces.
  • Next, in a large skillet, add cumin, the oil, minced garlic, (please note that I didn’t use garlic because of my allergy.), and meat. Once the garlic has cooked a few minutes, pour half of the Ancho mixture over the meat. Set it aside.

Step 3: Corn Shucks

  • Soak shucks in hot water.

Step 4: Masa Dough

  • Mix masa & grits with enough the pepper liquid & meat juice to be like a pie dough.

Step 5: Assemble and Cook

  • Spread masa-grit mixture on corn shucks. Then spoon some meat mixture on shucks. Roll shucks, folding bottom. Then place in a steamer on the rack (you can use a colander). Put the plate upside down at the bottom of a large roasting pan. Cook 30 to 40 minutes, until shucks loosen easily from tamale.

Sometimes Kathryn loves to bring up old recipes to make them new and this recipe for German Apple cake is one of those. In addition to the German Apple Cake, Kathryn also makes one of her favorites, Pistachio Lemon cake with cream cheese frosting. German Apple Cake

Ingredients

  • 4 small apples
  • 1/2 cup unsalted butter room temperature
  • 1/2 cup granulated sugar
  • 2 tsp vanilla sugar or vanilla extract
  • 2 tsp fresh lemon juice 3 large eggs
  • 4 eggs room temperature
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 Tbsp milk
  • ½ cup Powdered sugar to sprinkle on the cooled cake

Instructions

  • Preheat oven to 350°F (175°C) and grease the bottom of a 9- or 10-inch springform
  • Peel, quarter, and core the apples. Make a ¼ “slice in each apple quarter lengthwise but not all the way through the apple
  • In the bowl of a stand mixer fitted with the paddle attachment, beat butter until creamy, about 1 minute. Add sugar and mix until light and fluffy, about 2 minutes.
  • Add eggs one at a time and beat for 30 seconds on high speed after each addition.
  • Add vanilla sugar (or extract), salt, and lemon juice. Beat until combined.
  • Combine flour, baking powder, and salt. With the mixer running on low speed add half of the flour, then 1 tbsp milk, followed by the remaining flour, and then the remaining milk. Beat until just combined. Don’t overmix!
  • Transfer batter into prepared pan and smooth the top with a spatula. Take each quarter of the apples and turn them upside down so you see the slices. the apples all around the cake and then put next apples into inner circle on top of the batter in a circular pattern until all the apples are gone. Bake in the lower third of the oven for 45 minutes, until lightly browned and a skewer comes out clean. Transfer to a cooling rack and remove the springform ring. Let cake cool on the bottom of the springform pan to room temperature. Sprinkle powdered sugar over the cooled cake and serve with sweetened whipped cream.

Lemon Pistachio Cake with Cream Cheese Frosting

Ingredients

Cake

  • 1 cup shelled roasted pistachios crush them in food processor for about 30 seconds or less
  • ½ cup of pistachios more for topping – Crushed
  • Zest of 2 lemons
  • cups cake flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ cup sour cream
  • 1 tsp vanilla extract 1/3 cup whole milk
  • ½ cup unsalted butter Softened
  • 1 cup sugar
  • ¾ tsp kosher salt
  • 3 eggs room Temperature

Frosting

  • ¾ cup ¾ cup Cream Cheese softened
  • 1 cup powdered sugar
  • 1 Tbsp heavy whipping cream or 2 Tbsp of Half and Half
  • 1 Tbsp grated lemon zest
  • 1 tsp Lemon juice

Instructions

Cake

  • Preheat the oven to 350 F. Line the bottom of a buttered 8 x 8-inch baking pan with parchment paper, then butter the paper. Place pistachios and lemon zest into a food processor bowl; pulse until finely ground (but not pistachio butter). Transfer mixture into a bowl. Add flour, baking powder and baking soda. Whisk to combine; set aside. Whisk together sour cream, vanilla and milk in a small bowl; set aside.
  • In the bowl of a stand mixer fitted with paddle attachment, cream butter, sugar and salt on medium speed until light and fluffy, about 3 minutes. Add eggs, one at a time, until fully incorporated. With mixer on low, alternate adding the dry ingredients (in 3 additions) and the wet ingredients (in 2 additions), starting and ending with the dry ingredients.
  • Pour the batter into the prepared pan; smooth the top. Bake 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. Cool 10 minutes. Carefully remove cake from pan, peel off the parchment paper, then invert onto a wire rack to cool completely.
  • Prepare the frosting: Combine all frosting ingredients in a medium bowl. Mix just until smooth, being careful not to overmix or curdle the frosting. Frost the cake, then sprinkle on extra chopped pista­chios. Serve or refrigerate until serving. Makes 8 servings.

Frosting

  • In a small bowl combine the Cream cheese 1 cup of powdered sugar and blend together I used my mixer on low and blended them add Whipping Cream and lemon zest, lemon juice and kosher salt. I increased the speed to medium on my mixer and whipped it till it was smooth. Then proceed to spread your icing on top of the cooled cake after icing sprinkle Lemon zest and crushed pistachios

Best Chili Ever- Served over Potato Pancakes

Ingredients

Diana Anderson's Best Chili Ever

  • 1 ½ lbs of ground pork (from Circle B Ranch go to www.circlebranchpork.com to order.)
  • 1 Jar JD’s Chili Tequila Lime Chili Fixins (to order https://www.jdschiliparlor.com/shop/)
  • ½ to ¾ cup water
  • ¼ cup yellow pepper I used the mini peppers
  • ¼ cup red pepper I did not have the yellow pepper so added more of the red.
  • ¼ cup orange Juice
  • 2 tbsp Avocado Oil- I sprayed my pan with Corn Huskers Gourmet Duck Fat Spray
  • 1 1/2 shallots chopped (Diana uses ¼ onion diced)
  • 1 clove garlic chopped (I omitted the garlic)

Potato Pancakes

  • 3 – 3 1/2 cups Frozen Shredded Potatoes for Hash Browns (I used Paper towels to get most of the moisture off potatoes and put them in the refrigerator for the next day.)
  • 2 eggs Beaten
  • 2 Tbsp Flour
  • ¼ tsp Baking Powder
  • 1 ½ tsp salt

Instructions

Chili

  • Sautee onion and garlic and peppers in avocado oil add pork and continue to cook until pork is no longer pink, drain off any excess fat. Add one jar of JD’s Chili Fixin’s Tequila Lime then add water, simmer uncovered for 15 minutes, add sea salt to taste and serve over Potato Pancakes or Fritos.

If you need a little extra flour to add it to the mixture.Since we were using this as a base for our Chili dish, the chili was warming, and we put 1 to tablespoons of Olive Oil into the electric frying pan when it was hot add the potato mixture about 3 tablespoons for each Pancake, we made two pancakes. They need to be light brown on each side.

  • We put them on a plate then used about 2 ladles of Chili on top of the Pancakes to serve. Add Mexican cheese to the top. And then served.

Mexican Lasagna

Ingredients

  • 24 oz salsa- homemade Salsa About 3 cups
  • 1 lb ground chicken or turkey
  • 2 Tbsp chili powder
  • 2 tsp ground cumin
  • ¾ onion diced
  • 1 red pepper diced
  • 1 15 oz can black beans drained and rinsed
  • 2 15 oz cans diced tomatoes
  • 1 16 oz jar salsa
  • 1 1/2 cup cheddar cheese shredded
  • 1 pkg 8-inch soft tortillas I used Chef Mex Poquitto Mas Flour Totillas
  • 3 Green onions chopped

Instructions

  • Preheat oven to 375 degrees. Lightly grease a casserole dish and set aside. – I used Cornhuskers Duck Fat Spray
  • In a large skillet add ground chicken and cook until no longer pink. Add chili powder and cumin.
  • Add diced onions and peppers and sauté for another 3 minutes.
  • Add black beans, diced tomatoes and 3/4 of the jar of salsa to skillet and mix to combine. Simmer for 5 minutes.
  • Meanwhile, cut tortilla in halves or quarters. Spread a small amount of salsa on bottom of casserole dish. Add one layer of cut tortillas and then layer some of the chicken mixture and some cheese. Repeat layers until casserole dish is filled.
  • Top with leftover salsa and cheese. Cover with foil and bake for 15-20 minutes. Remove foil and bake for another 5 minutes until cheese starts to brown and bubble.
  • Top with chopped green onions and your favorite toppings. Delicious!!!!

Ground Beef Enchilada Casserole

Ingredients

  • 1 1/2 lbs lean ground beef
  • 1 cup chopped onion
  • 1 tsp salt
  • 1 to 2 tsp pepper
  • 1 to 2 Tbsp chili powder
  • 1/2 tsp cumin
  • 1 cab of Black ripe olives chopped
  • 1 16 oz of Marinara Sauce
  • 4 oz green chili peppers chopped
  • 6 flour Chef Mex Paquito Mas flour tortillas
  • 8 oz Mexican blend cheese grated, or cheddar jack
  • 1/2 cup water

Instructions

  • In a Large Skillet (I used an Electric Skillet) cook ground beef and onion until beef is browned. Drain well. Stir the salt, pepper, chili powder, cumin, olives, tomato sauce, and chili peppers into the meat mixture. Bring to a boil. Remove from heat. I sprayed the 13×9 dish with Cornhuskers Gourmet Duck Fat Spray. Then alternate layers of lightly buttered tortillas, the meat mixture, and shredded cheese, ending with cheese sprinkled over top. Add water, and cover with lid or foil. Bake for 30 minutes.
  • Garnish with ripe olive slices, chopped green onions, and fresh chopped tomatoes.
  • Serve and enjoy!

Chicken Enchiladas

Ingredients

  • 1 Roasted Chicken from Store Chopped into pices (about half a chicken or two breasts)
  • Salt and pepper to taste
  • 4 tbsp taco seasoning
  • 1/3 cup chicken stock
  • 8 Med size Chef Mex Flour Tortillas
  • 5 cups cheddar cheese shredded
  • 1 cup scallions green onions, chopped
  • 1 15 oz can green enchilada sauce optional
  • 1 4.5 oz can chopped green chiles
  • Salsa and sour cream

Instructions

  • Sprinkle the Chicken with the Put the Taco seasoning and one third cup of chicken broth into a bowl and add chopped chicken mix chicken into it and then take the Tortilla put into the Tortilla maker and lay it down on ( I used a Quesadilla Electric maker) You can do it your skillet to the tortilla add a handful of cheese, then a pinch of scallions, then about 1/2 cup cooked chicken mixture. Moving quickly, spoon over a couple spoonsful of the cooked sauce and green enchilada sauce Top with another handful of cheese and top with another tortilla in the Electric Tortilla maker wait until the light is off and take it out of the Maker.

Mexican Street Corn by Marty Schultes

Ingredients

  • 8 cobs Fresh Corn boiled
  • 2 Jalapeno Peppers seeds removed and finely chopped
  • 1 small red onion finely chopped either by hand or food processor
  • 5 sweet baby peppers medium chopped
  • 1 bunch cilantros chopped (reserve a few leaves for garnish)
  • ¼ tsp Chili powder
  • tsp Paprika
  • ¼ tsp cumin
  • ¼ tsp red pepper flakes
  • ½ tsp salt
  • ½ cup sour cream
  • 2 Tbsp Mayonnaise
  • 1 tsp Fresh lime juice
  • ½ cup Crumbled Feta Cheese Save some for garnish

Instructions

  • In a small bowl combine sour cream, mayonnaise, salt, lime juice, chili powder, paprika, cumin, pepper flakes, lime juice, and salt. Set aside.
  • Cut the corn off the cob after boiling. Add the chopped vegetables and stir to combine. Next add finely chopped cilatro and mix again. Lastly, top with the sour cream mixture. Add more salt to taste. Garnish with additional feta cheese and cilatro leaves.

Pineapple and Mango Salsa

  • 2 to 3 Roma tomatoes – chopped in tiny pieces finely chopped
  • 2 mangoes sliced and cubed
  • 4 sweet baby peppers (red, yellow, and orange) chopped
  • 1 Jalapeno pepper remove seeds and finely chopped
  • 2 Tbsp Fresh Cilantro chopped
  • 1-2 Limes Juiced (2-3 Tbsp)

Instructions

  • Combine all ingredients. Add salt to taste

Kathryn’s Fruit Salad

Ingredients

  • 1 pint Fresh Strawberries Slice in half or quartered (depending on size)
  • 1 cup Raspberries
  • 1 cup Black Berries
  • 1 cup Blueberries
  • 1 banana sliced
  • Manderane oranges (for color) Optional
  • ½ cup Red and Green Grapes
  • 2 Tbsp of Sugar or Sweetener
  • 3 to 4 Tbsp Limoncello I make my own limoncello
  • Mint leaves for decoration.
  • whipped cream

Instructions

  • combine all ingredients. top with whipped cream and garnish with mint leaves

Simple Thai Noodle soup with Quorn Meatless Pieces

Ingredients

  • 10.5 oz Quorn Meatless Pieces OR Quorn Vegan Meatless Pieces
  • 2 Tbsp vegetable oil
  • 1 large onion sliced
  • 2 cloves garlic crushed – We did not use the garlic
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • ½ tsp cayenne pepper
  • 7 oz coconut milk
  • 4 cups vegetable stock
  • 2 carrots peeled and sliced
  • ½ cup baby corn sliced
  • ½ cup sugar snap peas sliced in half
  • 50 g 1 cup rice noodles, cooked to pack instructions
  • 2 spring onions finely sliced

Instructions

  • Heat 1 tbsp. oil in a large saucepan and sauté the onions over a medium heat for 5 minutes. Stir in the garlic and spices and cook for 2 more minutes.
  • Add the coconut milk, vegetable stock and vegetables. Bring to the boil and then simmer for 20 minutes.
  • Meanwhile, in a separate skillet, add 1 tbsp. oil and fry the Quorn Meatless Pieces for 7 minutes, until slightly golden.
  • Add the cooked rice noodles to the soup, along with the Quorn Meatless Pieces. Stir well and allow to simmer for 3 minutes.

Ingredients

  • 12 oz Bag Quorn Meatless Grounds
  • 2 Tbsp olive oil
  • 1 medium onion diced
  • 1 red bell pepper diced
  • 1-2 tsp fresh red chili pepper finely chopped
  • 2 peeled garlic cloves minced
  • tsp smoked paprika
  • 2 tsp ground cumin
  • 3 tsp ground coriander
  • 1 tsp chili powder optional depending on your heat preference
  • 14 oz can diced tomatoes
  • 2 cups strained unsalted tomatoes or canned unsalted crushed tomatoes
  • 3 Tbsp low sodium vegetable broth
  • 15 oz can kidney or pinto beans rinsed and drained Salt to taste (optional)
  • 2 Tbsp fresh cilantro leaves finely chopped

Instructions

  • Heat oil in a large skillet over medium heat. Add onion, sauté 4-5 minutes. Add bell pepper and cook for 5 minutes. Add the chili, garlic and spices. Cook for 2 minutes more.
  • Stir in the tomatoes, tomato paste and vegetable broth. Bring to a boil. Cover, reduce heat and simmer for 8 minutes, stirring from time to time.
  • Stir in the kidney beans and Quorn Meatless Grounds and cook over a low heat for 10 minutes. Season to taste with salt and stir in the fresh cilantro

Quorn Vegan Fillets with Kalamata Olives and Capers

  • 8 Quorn Meatless Vegan Fillets
  • Olive oil
  • 1 ¼ cup Taggiasche or Kalamata olives
  • 3 cups sundried tomatoes in oil 1
  • ¼ cup capers
  • 1 cup white wine
  • Salt & pepper to taste
  • Parsley

Instructions

  • Preheat 1 tbsp. of olive oil in a pan and cook the Quorn Vegan Meatless Fillets for 7-8 minutes.
  • Add olives, chopped sundried tomato and capers.
  • Stir and cook for 2 minutes more.
  • Deglaze the pan with white wine and taste; season with salt and pepper as desired.
  • Serve the Quorn Vegan Meatless Fillets garnish with parsley.

Quorn Vegan Pieces & Quinoa Salad

Ingredients

Main Ingredients

  • 1 bag Quorn Vegan Meatless Pieces
  • 1 Tbsp olive oil
  • 1/3 cup rice uncooked
  • 1/3 cup quinoa uncooked
  • 1/2 cup cooked edamame beans
  • 1/4 cup pumpkin seeds toasted
  • 2 handfuls baby kale roughly torn
  • 25-30 red grapes
  • halved freshly chopped mint leaves

Dressing

  • 3/4 cup pineapple juice
  • 1 Tbsp grated ginger
  • Tbsp tamari or soy sauce
  • 2 tsp rice wine vinegar

Instructions

  • Combine the ingredients for the dressing. Marinate the Quorn Vegan Meatless Pieces in half of the dressing for 30 minutes, place the remaining dressing in the refrigerator until needed.
  • Cook the rice and quinoa according to pack instructions, drain then set aside.
  • Pre-heat the oil in a frying pan and cook the marinated Quorn Vegan Meatless Pieces for 3-4 minutes. Add the kale and cook for a further 2-3 minutes until it begins to wilt.
  • In a bowl toss the marinated Quorn Vegan Meatless Pieces with the salad ingredients, drizzle over with the remaining dressing and garnish with freshly chopped mint leaves

  • In a blender container, combine the crushed ice, tequila, lime juice, powdered sugar, egg white, and Triple Sec. Cover and blend till very frothy.  Transfer to a pitcher; garnish with lime slices.  Serve in salt-rimmed cocktail glasses. Rub lime wedge on glass rim and invert glass into rim salt.

Cinco de Mayo Fruit Salad

Ingredients

Salad Ingrediants

  • 1/2 honeydew melon cubed or make melon balls
  • 1/2 cantaloupe cubed or make melon balls
  • 1/2 large ripe papaya peeled, seeded, cubed
  • 1 pint strawberries stemmed, halved
  • 1 cup pineapple chunks Fresh is best but canned is okay.
  • Fresh Mint Garnish

Jalapeño-Citrus Dressing

  • 1/3 cup orange juice Fresh squeezed is best
  • 3 Tbsp Fresh Lime Juice
  • 3 Tbsp Fresh Mint minced
  • 1 Tbsp sugar or honey (may also use Agave)

Instructions

Salad

  • Scoop seeds from the melons. Remove fruit from rind with a peeler or knife and using a melon baller or cut into 3/4 inch wedges. Place in large bowl. Add papaya, strawberries, pineapple and Jalapeño-Citrus Dressing; gently toss to combine. Serve immediately or cover and refrigerate up to 3 hours. Garnish with mint leaves.

Jalapeño-Citrus Dressing

  • Combine orange juice, lime juice, mint, jalapeños and sugar in small bowl; mix well.

Spanish Chicken and Rice

In large stockpot or skillet melt 1/2 cup of butter and then add a little olive oil, then brown 1 chopped onion chopped garlic brown slightly then add 1 bunch of parsley chopped add the chopped peppers and cook until limp, and cooked chicken and spices. Chop 1 bunch parsley Chop 1 sweet onion Chop 1 red bell pepper Chop 1 orange bell pepper Chop 5 cloves garlic Mix the chicken and veggies all together in large bowl and turn out into a casserole dish. Garnish with chopped parsley

  • 1 Packet Sazon Goya Seasoning (for rice)
  • 4 boneless, skinless chicken breasts cut into 1/2 inch chunks

  • 1 Chop 1 red bell pepper Chop 1 red bell pepper Chopped

  • 5 Chop 5 cloves garlic Chop 5 cloves garlic Chopped
  • 1 Tbsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/3 cup Mojo Sauce
  • 1/2 cup Butter
  • 4-5 Tbs Extra Virgin Olive Oil Divided
  • 1 bunch Flat Leaf Parsley Chopped

Instructions

Saffron Rice

  • Cook Saffron Yellow Rice as directed but add 1 packet of Sazon Goya B

Chicken

  • Cut four chicken breast halves into approx 1/2 inch chunks. In a deep skillet with 3 to 4 tablespoons of olive oil brown the chicken. Cook till no longer pink inside and remove from skillet.

Vegetables

  • Sauté all until veggies are tender but still have a crunch. Sprinkle with salt and pepper and add Mojo and Sazon. Mix the chicken and veggies all together in large bowl and turn out into a casserole dish. Dress with Parsley for Presentation.

Sopapilla Cheesecake

Ingredients

Main Ingrediants

  • 16 oz Soft Philadelphia cream cheese (Two 8 oz packages)
  • 1 1/2 cups Granulated Sugar
  • 1 tsp vanilla extract
  • 2 cans 8 ounce cans crescent roll dough sheets (if grocer doesn't have, use the crescent rolls but do NOT separate)
  • 1/2 cup Butter melted

Cinnamon Sugar Topping

  • 1/2 cup Granulated Sugar
  • 1 tsp Ground Cinnamon

Instructions

  • Preheat an oven to 350º F (175º C). Beat the cream cheese with 1 1/2 cups of sugar, and the vanilla extract in a bowl until smooth. Unroll the cans of crescent roll dough and use a rolling pin to shape the each piece into 9x13 inch rectangles. Press one piece into the bottom of a 9x13 inch baking dish. Evenly spread the cream cheese mixture into the baking dish, then cover with the remaining piece of crescent dough. Drizzle the melted butter evenly over the top of the cheesecake. Stir the remaining 1/2 cup of sugar together with the cinnamon in a small bowl, and sprinkle over the cheesecake. Bake in the preheated oven until the crescent dough has puffed and turned golden brown about 45 minutes. Cool completely in the pan before cutting into 12 squares.

  • 6 Ripe Plantains (Skins will be black)
  • 1/2 cup Granulated Sugar
  • 1 tsp kosher salt
  • Pinch freshly ground pepper (to taste)

Instructions

  • Remove skins and slice plantains on the diagonal. Heat organic coconut oil to in skillet to about 350º Fry in skillet until lightly browned on both sides. Do NOT crowd the skillet, fry in batches. Sprinkle with salt, pepper and sugar Drain on paper towel and sprinkle with remaining sugar Enjoy!

  • Use plastic gloves when working with Jalapeno Peppers Cut Jalapeno Peppers in Half (long ways) Clean all the seeds out of the peppers then take your cream cheese put in bowl and mash it. Then scoop up cream cheese with your hand and put it in the Jalapeno pepper to fill it completely. Then take the strip of bacon and wrap completely around the pepper put into pan and broil until bacon is browned.

Jamya Chocolate Chip Cake & Cream Cheese Icing

Cake

  • 1 box Betty Crocker Chocolate Fudge Super Moist Cake
  • 3 Eggs
  • 1/2 cup Oil
  • 1/4 cup water

Icing

  • 8 oz cream cheese room temperature
  • 4 oz Cool Whip
  • 1 cup Confectioners Sugar
  • 1 cup miniature Chocolate Chips

Instructions

  • Bake in 13x9 pan for 30 to 35 minutes or until a tooth pick inserted comes out clean – Let cool for at least 45 minutes then spread with cream cheese frosting and serve.
  • Soften 8 oz of cream cheese in a bowl then add cool whip and confectionary sugar and mix medium speed until blended well and fluffy then ice a cool cake. Sprinkle Chocolate Chips over entire cake.
  • Mix on medium speed or beat vigorously by hand 2 minutes pour into greased Pan

KR-Salsa
