Orange Glazed Arugula Salad

The Chef, You and I Show with Kathryn Raaker and Fr. Andrew Umberg. On this show, they prepare some of Father Umberg’s favorite recipes. The first is Brussels sprouts with bell peppers and steak with hoisin sauce. Next, we prepare fried rice with shrimp. Lastly, we make an arugula salad with orange glaze dressing. 

Father Andrew’s Fried Rice with Fresh Shrimp

Ingredients

  • 1 ½ lbs. Fresh shrimp Peeled and Deveined
  • 3 cups cooked rice
  • ½ large yellow onion finely chopped
  • ½ cup Peanutor cooking oil
  • 2 Tbsp Butter
  • 2 cups Frozen Peas and Carrots cooked for 2 to 3 minutes in the microwave.
  • 2 large eggs beaten
  • 1 large Zucchini cubed

Father Andrew’s Orange Glazed Arugula Salad

Ingredients

  • 1/4 cup chopped walnuts or pecans
  • 1/4 cup raisins
  • 1 large Naval orange zested and sliced
  • 2 packets of Stevia
  • 3 Tbsp Olive Oil
  • 4 Tbsp Balsamic Vinegar
  • 1 10 oz Package Arugula
  • 4 oz Goat Cheese Crumbled

Instructions

  • Assemble walnuts, orange zest. Heat oil, add the orange zest or splinters until it bubbles, then remove from heat. Add Balsamic Vinegar to the mixture. Pour into a bowl to cool. Put the mixture into the refrigerator until ready to serve on the Arugula.
  • Add Arugula to Bowl, Then Add one package of Stevia to the Balsamic and Oil Mixture. Fluff the
  • Arugula in the Bowl, then Spoon on Dressing, add Raisins and Nuts, Toss, then top with arugula and
  • Decorate with Orange slices. Serve 4 Servings.

Father Andrew’s Steak with Brussel Sprouts Red Peppers

Ingredients

  • 8 to 10 oz -Bag Fresh Brussel Sprouts
  • 5 Tbsp Hoisin Sauce
  • 2 Small Steaks sliced thin
  • 1 Large Red Bell Pepper sliced into strips, and then cut in half
  • 1 ½ medium Zucchinis cubed
  • ½ large onion finely chopped
  • 2 Tbsp Butter
  • ½ cup Peanut oil
  • ¼ tsp salt

Instructions

  • Prep: Slice nob off the Brussels sprouts, then cut quarters. Grill steaks and slice thin.
  • In a Wok, heat oil and butter. When the butter is melted, add finely chopped onions -sweat the onions. Next, add the Brussel Sprouts and then Red Pepper. Once the Brussels sprouts are tender, stir in steak pieces, add Hoisin Sauce, and reduce the heat to a simmer. Serve on rice or with Fried Rice with shrimp and vegetables.

Kathryn’s Garlic-free BBQ Sauce

Ingredients

  • 4 ½ cups organic ketchup
  • 3/4 cup honey
  • 1/2 cup light brown sugar (Add 1/4 more if you prefer your sauce sweeter
  • 3/4 cup apple cider vinegar
  • 2 cups water
  • 2 tsp ground pepper fresh
  • 1 ½ Tbsp onion powder
  • 2 Tbsp lemon juice
  • 1 1/2 tsp Lemon Pepper

Instructions

  • Mix all together and store it in a tight-fitting glass container.

Notes

I double the recipe if I am making a number of dishes.

 

Sweet and Spicy Ground Beef Rice Bowls

Ingredients

  • 2 lbs Organic Ground Beef
  • 2 Tbsp fresh ginger grated
  • 1 small onion finely chopped
  • 1 tsp crushed red pepper
  • ½ cup honey
  • 1 Tbsp Soy sauce
  • 1 Tbsp Tamarin
  • 1 tsp sea salt or more to taste
  • ½ tsp fresh ground black pepper
  • 4 cups basmati rice cooked (kept warm)
  • 1 small English cucumber sliced in rounds
  • 4 radishes thinly sliced
  • 2 green onions white and light green parts, thinly sliced
  • ½ cup water
  • ½ tsp Lemon and Pepper See the recipe below

 

Kathryn’s Asian Salad Dressing

Provided by Sunkist Oranges

Ingredients

Dressing

  • ¼ cup rice wine vinegar
  • 1 Tbsp sesame oil
  • 2 Tbsp low-sodium soy sauce
  • 2 Tbsp Olive oil
  • 1 tsp freshly grated ginger
  • minced onion
  • Salt and pepper to taste

Salad

  • 2 cups napa cabbage cored and thinly sliced
  • 1 cup purple cabbage cored and thinly sliced
  • 1 cup carrots shredded
  • 2 green onions thinly sliced
  • 1 avocado pitted, peeled and sliced
  • 4 mandarins peeled and segmented
  • 2 Tbsp cilantro chopped
  • ¼ cup slivered or sliced almonds

Instructions

Dressing

  • Prepare the dressing: In a small bowl, whisk together the dressing ingredients.

Salad

  • Prepare the salad: Combine cabbage, carrots, green onions, avocado and chicken in a large bowl. Toss well to combine, then add the mandarins, cilantro and almonds.
    Kathryn combines the ingredients for her Asian Salad
  • Pour the dressing over the salad just before serving, and sprinkle with sesame seeds. Makes 2 to 3 servings. ds, for garnish (optional)

Octoberfest Ground Beef Burgers

Recipe from Mr. Food

Ingredients

  • 1 lb lean ground beef
  • 1 lb ground pork
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • ½ cup plain panko bread crumbs
  • 1 Tbsp vegetable oil
  • 1 12-ounce jar beef gravy
  • 1/2 lb fresh mushrooms sliced

Instructions

  • In a large bowl, combine ground beef, ground pork, onion powder, salt, and pepper; mix well and form into 6 equal patties. Place bread crumbs in a shallow dish; coat patties evenly.
  • In a large skillet over medium heat, heat oil until hot; cook patties 5 to 6 minutes per side, or until no pink remains. Remove to a platter and cover to keep warm.
  • Place gravy and mushrooms in the skillet and cook over medium heat 3 to 4 minutes, or until mushrooms begin to soften. Spoon over patties and serve immediately.
  • Serve with Red Cabbage and Rice.

Cranberry Brie Bites

Recipe from All Recipes

Ingredients

  • 1 can Whole Cranberry Berries sauce (not the Jellied Sauce)
  • 8 oz round of Brie
  • 1 sheet Puff pastry found in the freezer section
  • Chopped walnuts pr chopped pecans
  • Pinch Sea Salt

Instructions

  • Roll the puff pastry into a rectangle. Then use a sharp knife to cut the puff pastry into 24 squares.
  • Place your Brie in the freezer for about 20 minutes to make it easier to cut. After the 20 minutes remove the Brie from the freezer and cut it into 24 even pieces.
  • Press the pastry squares into an oiled muffin tin. Spoon each square with a teaspoon of cranberries, then top with the Brie. Sprinkle with walnuts and a pinch of sea salt. Chill 30 min before baking. Preheat oven to 400° F
  • Bake for 12 to 14 minutes or until golden brown.

 

Paula Dean’s Spiced Cranberry Pecan Bars

I love these tasty Bars. You can freeze them as well.

Ingredients

Ingredients for Crust

  • 2 ½ cups all-purpose flour
  • ½ cup sugar
  • 1 ½ tsp apple pie spice I used a homemade recipe
  • ¾ tsp baking powder
  • ½ tsp ground ginger
  • ½ tsp kosher salt
  • 1 cup cold butter cubed
  • 1 egg

Ingredients for the Filling

  • 5 cups fresh cranberries Divided
  • ¾ cup sugar
  • ½ cup applesauce
  • ½ cup maple syrup
  • 2 Tbsp orange zest
  • 2 Tbsp fresh orange juice
  • 1 ½ Tbsp cornstarch
  • ¼ tsp kosher salt 1 ½ Tablespoons of cornstarch

Ingredients for Topping

  • ½ cup chopped pecans
  • ½ cup old-fashioned oats

Crust Instructions

  • Preheat oven 350° F and line 13”x9” baking pan with parchment paper.
    Pecan Cranberry Bars-serving
  • In a bowl whisk together the flour, sugar, apple pie spice, baking powder, ginger, and salt. Cut in the butter using a hand mixer until crumbly. Next beat in egg. Reserve 1 cup mixture; press remaining into bottom of the pan. Bakparchment lined pan and bake until golden 18-20 minutes.

Filling Instructions

  • In a large pot, mix 3 cups cranberries, sugar, applesauce, maple syrup, orange zest, orange juice, and salt; over medium-high heat, cook, stirring, until berries begin to burst. Reduce heat to low; simmer for 10 min. In a small bowl, whisk cornstarch with 1 1/2 Tbsp water; stir into berry mixture. Cook until thick, 2minutes. Remove from heat; fold in remaining berries. Spread over crust.

Topping Instructions

  • Mix pecans, oats and 1 cup of crust mixture. Sprinkle on filling. Bake until golden, 30 minutes; let cool. Cut in bars. You can freeze the bars.

Join with Kathryn as she prepares these recipes on this episode of “The Chef, You, and I ,” where she will whip up a couple of cakes and prepare a special recipe using JD’s Chili made with ground beef from Circle C Ranch and using her 360 cookware. Sometimes Kathryn loves to bring up old recipes to make them new and this recipe for German Apple cake is one of those. In addition to the German Apple Cake, Kathryn also makes one of her favorites, Pistachio Lemon cake with cream cheese frosting. Lastly, Kathryn tries a recipe from JD’s Chili and pairs it with a Potato Pancake. Join with Kathryn as she prepares these recipes on this episode of “The Chef, You, and I.”

German Apple Cake

Ingredients

  • 4 small apples
  • 1/2 cup unsalted butter room temperature
  • 1/2 cup granulated sugar
  • 2 tsp vanilla sugar or vanilla extract
  • 2 tsp fresh lemon juice 3 large eggs
  • 4 eggs room temperature
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 Tbsp milk
  • ½ cup Powdered sugar to sprinkle on the cooled cake

Instructions

  • Preheat oven to 350°F (175°C) and grease the bottom of a 9- or 10-inch springform
  • Peel, quarter, and core the apples. Make a ¼ “slice in each apple quarter lengthwise but not all the way through the apple
  • In the bowl of a stand mixer fitted with the paddle attachment, beat butter until creamy, about 1 minute. Add sugar and mix until light and fluffy, about 2 minutes.
  • Add eggs one at a time and beat for 30 seconds on high speed after each addition.
  • Add vanilla sugar (or extract), salt, and lemon juice. Beat until combined.
  • Combine flour, baking powder, and salt. With the mixer running on low speed add half of the flour, then 1 tbsp milk, followed by the remaining flour, and then the remaining milk. Beat until just combined. Don’t overmix!
  • Transfer batter into prepared pan and smooth the top with a spatula. Take each quarter of the apples and turn them upside down so you see the slices. the apples all around the cake and then put next apples into inner circle on top of the batter in a circular pattern until all the apples are gone. Bake in the lower third of the oven for 45 minutes, until lightly browned and a skewer comes out clean. Transfer to a cooling rack and remove the springform ring. Let cake cool on the bottom of the springform pan to room temperature. Sprinkle powdered sugar over the cooled cake and serve with sweetened whipped cream.

Lemon Pistachio Cake with Cream Cheese Frosting

Ingredients

Cake

  • 1 cup shelled roasted pistachios crush them in food processor for about 30 seconds or less
  • ½ cup of pistachios more for topping – Crushed
  • Zest of 2 lemons
  • cups cake flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ cup sour cream
  • 1 tsp vanilla extract 1/3 cup whole milk
  • ½ cup unsalted butter Softened
  • 1 cup sugar
  • ¾ tsp kosher salt
  • 3 eggs room Temperature

Frosting

  • ¾ cup ¾ cup Cream Cheese softened
  • 1 cup powdered sugar
  • 1 Tbsp heavy whipping cream or 2 Tbsp of Half and Half
  • 1 Tbsp grated lemon zest
  • 1 tsp Lemon juice

Instructions

Cake

  • Preheat the oven to 350 F. Line the bottom of a buttered 8 x 8-inch baking pan with parchment paper, then butter the paper. Place pistachios and lemon zest into a food processor bowl; pulse until finely ground (but not pistachio butter). Transfer mixture into a bowl. Add flour, baking powder and baking soda. Whisk to combine; set aside. Whisk together sour cream, vanilla and milk in a small bowl; set aside.
  • In the bowl of a stand mixer fitted with paddle attachment, cream butter, sugar and salt on medium speed until light and fluffy, about 3 minutes. Add eggs, one at a time, until fully incorporated. With mixer on low, alternate adding the dry ingredients (in 3 additions) and the wet ingredients (in 2 additions), starting and ending with the dry ingredients.
  • Pour the batter into the prepared pan; smooth the top. Bake 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. Cool 10 minutes. Carefully remove cake from pan, peel off the parchment paper, then invert onto a wire rack to cool completely.
  • Prepare the frosting: Combine all frosting ingredients in a medium bowl. Mix just until smooth, being careful not to overmix or curdle the frosting. Frost the cake, then sprinkle on extra chopped pista­chios. Serve or refrigerate until serving. Makes 8 servings.

Frosting

  • In a small bowl combine the Cream cheese 1 cup of powdered sugar and blend together I used my mixer on low and blended them add Whipping Cream and lemon zest, lemon juice and kosher salt. I increased the speed to medium on my mixer and whipped it till it was smooth. Then proceed to spread your icing on top of the cooled cake after icing sprinkle Lemon zest and crushed pistachios

Best Chili Ever- Served over Potato Pancakes

Ingredients

Diana Anderson's Best Chili Ever

  • 1 ½ lbs of ground pork (from Circle B Ranch go to www.circlebranchpork.com to order.)
  • 1 Jar JD’s Chili Tequila Lime Chili Fixins (to order https://www.jdschiliparlor.com/shop/)
  • ½ to ¾ cup water
  • ¼ cup yellow pepper I used the mini peppers
  • ¼ cup red pepper I did not have the yellow pepper so added more of the red.
  • ¼ cup orange Juice
  • 2 tbsp Avocado Oil- I sprayed my pan with Corn Huskers Gourmet Duck Fat Spray
  • 1 1/2 shallots chopped (Diana uses ¼ onion diced)
  • 1 clove garlic chopped (I omitted the garlic)

Potato Pancakes

  • 3 – 3 1/2 cups Frozen Shredded Potatoes for Hash Browns (I used Paper towels to get most of the moisture off potatoes and put them in the refrigerator for the next day.)
  • 2 eggs Beaten
  • 2 Tbsp Flour
  • ¼ tsp Baking Powder
  • 1 ½ tsp salt

Instructions

Chili

  • Sautee onion and garlic and peppers in avocado oil add pork and continue to cook until pork is no longer pink, drain off any excess fat. Add one jar of JD’s Chili Fixin’s Tequila Lime then add water, simmer uncovered for 15 minutes, add sea salt to taste and serve over Potato Pancakes or Fritos.

  • Put the potatoes in a bowl and the Beaten eggs, flour, baking powder, salt mix well. If you need a little extra flour to add it to the mixture.Since we were using this as a base for our Chili dish, the chili was warming, and we put 1 to tablespoons of Olive Oil into the electric frying pan when it was hot add the potato mixture about 3 tablespoons for each Pancake, we made two pancakes. They need to be light brown on each side.

Serve

  • We put them on a plate then used about 2 ladles of Chili on top of the Pancakes to serve. Add Mexican cheese to the top. And then served.

Mexican Lasagna

Ingredients

  • 24 oz salsa- homemade Salsa About 3 cups
  • 1 lb ground chicken or turkey
  • 2 Tbsp chili powder
  • 2 tsp ground cumin
  • ¾ onion diced
  • 1 red pepper diced
  • 1 15 oz can black beans drained and rinsed
  • 2 15 oz cans diced tomatoes
  • 1 16 oz jar salsa
  • 1 1/2 cup cheddar cheese shredded
  • 1 pkg 8-inch soft tortillas I used Chef Mex Poquitto Mas Flour Totillas
  • 3 Green onions chopped

Instructions

  • Preheat oven to 375 degrees. Lightly grease a casserole dish and set aside. – I used Cornhuskers Duck Fat Spray
  • In a large skillet add ground chicken and cook until no longer pink. Add chili powder and cumin.
  • Add diced onions and peppers and sauté for another 3 minutes.
  • Add black beans, diced tomatoes and 3/4 of the jar of salsa to skillet and mix to combine. Simmer for 5 minutes.
  • Meanwhile, cut tortilla in halves or quarters. Spread a small amount of salsa on bottom of casserole dish. Add one layer of cut tortillas and then layer some of the chicken mixture and some cheese. Repeat layers until casserole dish is filled.
  • Top with leftover salsa and cheese. Cover with foil and bake for 15-20 minutes. Remove foil and bake for another 5 minutes until cheese starts to brown and bubble.
  • Top with chopped green onions and your favorite toppings. Delicious!!!!

Ground Beef Enchilada Casserole

Ingredients

  • 1 1/2 lbs lean ground beef
  • 1 cup chopped onion
  • 1 tsp salt
  • 1 to 2 tsp pepper
  • 1 to 2 Tbsp chili powder
  • 1/2 tsp cumin
  • 1 cab of Black ripe olives chopped
  • 1 16 oz of Marinara Sauce
  • 4 oz green chili peppers chopped
  • 6 flour Chef Mex Paquito Mas flour tortillas
  • 8 oz Mexican blend cheese grated, or cheddar jack
  • 1/2 cup water

Instructions

  • In a Large Skillet (I used an Electric Skillet) cook ground beef and onion until beef is browned. Drain well. Stir the salt, pepper, chili powder, cumin, olives, tomato sauce, and chili peppers into the meat mixture. Bring to a boil. Remove from heat. I sprayed the 13×9 dish with Cornhuskers Gourmet Duck Fat Spray. Then alternate layers of lightly buttered tortillas, the meat mixture, and shredded cheese, ending with cheese sprinkled over top. Add water, and cover with lid or foil. Bake for 30 minutes.
  • Garnish with ripe olive slices, chopped green onions, and fresh chopped tomatoes.
  • Serve and enjoy!

Chicken Enchiladas

Ingredients

  • 1 Roasted Chicken from Store Chopped into pices (about half a chicken or two breasts)
  • Salt and pepper to taste
  • 4 tbsp taco seasoning
  • 1/3 cup chicken stock
  • 8 Med size Chef Mex Flour Tortillas
  • 5 cups cheddar cheese shredded
  • 1 cup scallions green onions, chopped
  • 1 15 oz can green enchilada sauce optional
  • 1 4.5 oz can chopped green chiles
  • Salsa and sour cream

Instructions

  • Sprinkle the Chicken with the Put the Taco seasoning and one third cup of chicken broth into a bowl and add chopped chicken mix chicken into it and then take the Tortilla put into the Tortilla maker and lay it down on ( I used a Quesadilla Electric maker) You can do it your skillet to the tortilla add a handful of cheese, then a pinch of scallions, then about 1/2 cup cooked chicken mixture. Moving quickly, spoon over a couple spoonsful of the cooked sauce and green enchilada sauce Top with another handful of cheese and top with another tortilla in the Electric Tortilla maker wait until the light is off and take it out of the Maker.

Mexican Street Corn by Marty Schultes

Ingredients

  • 8 cobs Fresh Corn boiled
  • 2 Jalapeno Peppers seeds removed and finely chopped
  • 1 small red onion finely chopped either by hand or food processor
  • 5 sweet baby peppers medium chopped
  • 1 bunch cilantros chopped (reserve a few leaves for garnish)
  • ¼ tsp Chili powder
  • tsp Paprika
  • ¼ tsp cumin
  • ¼ tsp red pepper flakes
  • ½ tsp salt
  • ½ cup sour cream
  • 2 Tbsp Mayonnaise
  • 1 tsp Fresh lime juice
  • ½ cup Crumbled Feta Cheese Save some for garnish

Instructions

  • In a small bowl combine sour cream, mayonnaise, salt, lime juice, chili powder, paprika, cumin, pepper flakes, lime juice, and salt. Set aside.
  • Cut the corn off the cob after boiling. Add the chopped vegetables and stir to combine. Next add finely chopped cilatro and mix again. Lastly, top with the sour cream mixture. Add more salt to taste. Garnish with additional feta cheese and cilatro leaves.

Pineapple and Mango Salsa

Ingredients

  • 2 to 3 Roma tomatoes – chopped in tiny pieces finely chopped
  • 2 mangoes sliced and cubed
  • 4 sweet baby peppers (red, yellow, and orange) chopped
  • 1 Jalapeno pepper remove seeds and finely chopped
  • 2 Tbsp Fresh Cilantro chopped
  • 1-2 Limes Juiced (2-3 Tbsp)

Instructions

  • Combine all ingredients. Add salt to taste

Kathryn’s Fruit Salad

Ingredients

  • 1 pint Fresh Strawberries Slice in half or quartered (depending on size)
  • 1 cup Raspberries
  • 1 cup Black Berries
  • 1 cup Blueberries
  • 1 banana sliced
  • Manderane oranges (for color) Optional
  • ½ cup Red and Green Grapes
  • 2 Tbsp of Sugar or Sweetener
  • 3 to 4 Tbsp Limoncello I make my own limoncello
  • Mint leaves for decoration.
  • whipped cream

Instructions

  • combine all ingredients. top with whipped cream and garnish with mint leaves

In this show, Kathryn prepares a beef stew using an Instant Pot. 

Kathryn’s Instant Pot Beef Stew

Ingredients

  • 2 lbs Beef Stew Meat (I used a Beef Round roast cut into cubes)
  • 2 Tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Lemon/Pepper Spice
  • 2 Tbsp Worcestershire Sauce
  • 1 Large Onion Chopped
  • 1 16 oz Bag Baby Carrots Cut into Slices (can also use 1 cup of the precut carrots
  • 1 Pound Potatoes Cubed
  • 2 1/2 cups Low-sodium Beef Broth
  • 1 ½ cans diced Tomatoes
  • 3 Tbsp Ketchup or tomato paste
  • 1 1/2-2 cups Red Wine or more beef stock
  • 2 Tbsp Cornstarch
  • 2 Tbsp Water

  • Add the olive oil to the instant pot and turn on the sauté function. When the oil starts to sizzle add the meat and season with the salt, pepper, and spices. Cook the meat until Browned on all sides.
  • Add the beef broth to the instant pot and use a spoon to scrape the brown bits from the bottom of the pan.
  • Add the Worcestershire sauce, onion, carrots, potatoes, diced tomatoes, mushrooms, and ketchup. Stir and close the lid and steam valve on the instant pot.
  • Cook on high pressure for 35 minutes, then allow the pressure to release naturally for 10 minutes before doing a quick release.
  • Mix the cornstarch and cold water in a small bowl until dissolved. Stir this into the stew until thickened.
  • Serve with Crusty French Bread delicious

Kathryn’s Temecula California Romaine Salad with Dressing

Ingredients

  • 1 medium Red Onion thinly sliced
  • 4 Tbsp Fresh Apple California Balsamic Blanco Vinegar Divided
  • 3 Tbsp Temecula "Just Dress it Olive Oil" or your favorite Extra Virgin Olive Oil
  • ¼ tsp salt
  • 1 ½ tsp Dijon mustard
  • ½ cup Asiago Cheese shredded and divided
  • 3 heads Romaine lettuce Hearts torn
  • 3 Tbsp dried Cranberries

Instructions

  • In a small bowl toss onion with 2 tablespoons of the Vinegar. Add ¼ tsp of salt let it marinade for at least 15 minutes.
  • *In a large bowl whisk together remaining oil, mustard and remaining vinegar. Stir ¼ cup of the asiago cheese.
  • Add Lettuce and gently toss to coat. Drain Onions and sprinkle over salad.
  • Lastly, add the Dried Cranberries. Serve cold and sprinkle with remaining Asiago cheese.

*You can also make the dressing in a small jar. Add the ingredients and shake until emulsified.

Kathryn’s Persimmon Pudding cake

Ingredients

  • 2-3 cups Hachiya persimmon pulp (Puree in blender or food processor
  • ¾ cups sugar
  • ½ cup butter melted
  • 4 eggs
  • ¾ cup 2% Milk
  • 1 ½ tsp vanilla
  • 1 ½ cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 12 tsp cinnamon
  • ½ tsp ground nutmeg
  • 1 tsp ground ginger
  • 1 tsp allspice
  • 1 tsp Pumpkin spice
  • 1 cup chopped nuts – *optional if allergies to nuts
  • 3 Tbsp golden raisins use instead of nuts
  • Whipping cream or ice cream

Instructions

  • Preheat oven to 400° F. Butter a *9 x 13 cake pan or use cooking spray (I use Pam).
  • In a large bowl, mix the persimmon pulp, sugar, eggs butter, milk and vanilla. In a separate bowl whisk together the flour, baking powder, baking soda, salt and spices.

  • Add the dry ingredients to the wet ingredients, a third at a time, until everything is mixed well together. Add the nuts (or the raisins for nut allergies).
  • Serve with Whipping Cream or Ice Cream

Clark Bartram’s Chili

Ingredients

  • 2 lbs ground beef (80-85)
  • 1 16 oz can Kidney Beans
  • 1 cup white button mushrooms
  • 1 16 oz can Black Beans
  • 1/2 cup chopped onions
  • 1 14.5 oz can organic chopped tomatoes
  • 1 24 oz jar organic tomato puree
  • 2 Tbsp chili powder
  • garlic to taste (typically, 2-4 cloves, finely minced)
  • pinch Salt

Instructions

  • Sauté ground beef until it is brown. Place meat into big pot and add all other ingredients. Cook on medium heat, stirring occasionally, for 30-45 minutes.

Clark Bartram’s Ginger Beef with Jasmine Rice

Ingredients

Homemade Asian Sauce

  • 1/2 cup tamari or low-sodium soy sauce
  • 5 tbsp Sugar-free brown sugar
  • 2 tsp Minced Garlic
  • 1/2 tsp Ginger
  • 2 tsp rice vinegar

Beef Skillet

  • 4 10 oz packages snow peas
  • 4 Tbsp EV olive oil
  • 2 10 oz packages white button mushrooms sliced thin
  • 7 thinly sliced cuts of beef (sirloin steak strips flank steak)
  • 2 1/2 cups Jasmine Rice
  • 5 cups organic water

Instructions

Rice

  • Make the rice. In a large stove top pot, add 5 cups of water and bring to a boil. Stir in rice and reduce heat to low. Cover pot to keep steam inside, 25-35 minutes. Rice will be firm but tender. Fluff the rice

Asian Sauce

  • Combine all the sauce ingredients in a bowl and whisk. Set aside.

Beef Skillet

  • Heat a large skillet with 2 tbsp. olive oil. Add thinly sliced mushrooms and snow peas. Cook them on high heat, turning occasionally, until browned. Salt midway. Remove these veggies to a bowl. To the same skillet, on high heat, add 2 more tbsp. of olive oil. Add thinly sliced meat. (NOTE: Do this in 2 batches, to enable each slice of meat to touch the bottom of the skillet and for meat slices not to be crowded.) Cook meat on one side until it browns. Turn over all meat slices to the opposite side, and cook more, on high heat, until all slices brown. Add the sauce to the skillet and stir to combine about 1 minute. Turn off heat and add snow peas and mushrooms - and let sit under a lid for 10-15 minutes before storing.

Clark Bartram’s Blackened Fish Taco Salad

Ingredients

  • 7 tilapia filets or other white fish filet
  • 1 15.25 oz can organic corn kernels
  • 1 Tbsp chili powder
  • 1 small red onion sliced
  • 1/2 tsp Cayenne Pepper
  • 1 medium red bell pepper diced
  • 1/2 tsp smoked paprika
  • 1 15 oz can kidney or black beans drained and rinsed
  • 1/4 tsp onion powder
  • 2 12 oz bags shredded iceberg lettuce
  • 1 pinch of oregano
  • 1 10 oz bag shredded purple cabbage
  • 1 tbsp Minced Garlic
  • 4 avocados sliced
  • 1 tbsp fresh cilantro Chopped

Instructions

  • Pre-heat the oven to 375º. Line a baking sheet with aluminum foil and place the 7 tilapia fillets onto a pan. Be careful not to crowd the pan. Combine spices in a small dish. Sprinkle seasonings over tilapia fillets, season with salt and pepper. Place the fish into the oven for 25 minutes. Poke fish with a fork to see if it’s white and flaky. It might need 5 more minutes. Remove the fish from the oven and sprinkle with lime zest, then place filets aside in large glass dish. Heat a large skillet to medium high with a drizzle of olive oil, corn, red onion and red bell pepper. Sear for 1-2 minutes without stirring. Stir and cook another few minutes until vegetables are tender and caramelized. Add drained and rinsed black beans and heat for 1 minute.

Clark Bartram’s Meatloaf

Course: Main Dish

Ingredients

  • 2 Tbsp grass-fed butter
  • 1 pinch coarse sea salt
  • 1 small red onion diced
  • 1 pinch Black Pepper
  • 2 Tbsp Minced Garlic
  • 2 Tbsp Extra Virgin Olive Oil
  • 2 Tbsp fresh cilantro chopped
  • 2 12 oz bags fresh green beans
  • 3 lbs grass-fed organic ground beef 20% fat
  • 2 free-range or cage free eggs beaten
  • 1 cup gluten-free bread crumbs (omit dairy & gluten for 90 days to build testosterone)
  • 1 Tbsp Extra Virgin Olive Oil
  • garlic salt to taste
  • pepper to taste

Instructions

  • Heat oven to 375º. Melt the butter in a large stove-top skillet. Add the red onion and garlic into the skillet and sweat the mixture until translucent. Place the remaining ingredients and onion mixture into a bowl and mix with your hands. Oil a meatloaf pan (5 x 9” loaf pan) with olive oil and press the mixture into a pan. Cook for 40 minutes. While the meatloaf is cooking grab a large stove top wok and place on the stovetop at medium heat. Add olive oil to base of the wok and then add beans. Stir the beans occasionally until they’ve turned golden brown, about 10-15 minutes. Check the meatloaf with a meat thermometer to see if it has reached 160º. Once the temperature is reached, remove the meatloaf and slice.

  • 1 1/2 Packages Frozen Chopped Spinach
  • 1/2 cup chopped cooked Chicken Splinter Chicken
  • 3 Med Eggs - beaten
  • 2 tablespoons Romano Parmesan Cheese

Instructions

  • In a large Bowl add Italian Sausage and Ground Beef use fork and chop meat mixture, add spices, mid then add egg and mix thoroughly, then add dry bread crumbs mix until mixture seems a little dry not wet. Then take an break up meat into small pieces about size of grape and then roll into meatballs with your hands. Heat up skillet and lightly brown meat.

Soup stock

  • Use large soup pot turn on medium heat and add Virgin Olive Oil heat and then add minced garlic until it sizzles. Add 2 quarts of chicken stock and let boil on medium heat. Add Meat balls stir let cook for minute and then and chopped spinach. Pour eggs in a ribbon swirl let egg mixture cook for few seconds then take fork go back and forth separates egg . Let mixture simmer on stove. Chop up chicken in small pieces then push down on chicken separate until it looks like splinters then add to soup mixture. Then stir let cook for one minute. Spoon into individual bowls and add Parmesan Cheese.
